"Couve is not a normal coffee shop- it is a specialty artisan coffee shop and roastery. Don’t expect to come here for a sugary or a fast service coffee. They are pouring some of the most meticulously crafted drinks in town. They use the best and highest quality ingredients. The hospitality is something that you’d get in a fine restaurant. Their owners and baristas will offer you great recommendations, they take the time to meet their regulars and understand their likings. They are new and evolving in the best way with their ear to their community. I come for their couve matcha which is truly perfectly balanced and rich, not overly sweet or milky. They get it right every time! Make sure to try to chocolate chip cookie (come early because they sell out!) or try the Cheddar chive scone if you like savory treats. Best in town!!! "Edit: 6 more visits and 5 months later, bringing up my review from 3 to 4 stars — their drinks are consistent and reliable, and I like their Mont Blanc a lot! Original: Been here four times now and I have mixed feelings. Their drinks are not too sweet, which I appreciate (especially the tiramisu latte), and I really like their use of Koatji as their alternative milk, it’s an oat and koji (fermented rice) milk blend that complements most things I’ve tried so far. However, prices are noticeably higher than most coffee and matcha spots ($5 for espresso compared to Alchemy nearby with $2.98 espresso, Blue Bottle is the only spot I know that has similar prices to Couve). The owners and staff are kind and patient, but the space feels more bare than intentionally minimalist. The parking, mostly marked for takeout or one-hour use, along with the bare walls and how the roastery area feels unused when you enter, make Couve feel a bit cold and unfinished. Couve is one of Vegas’s newer coffee spots, tucked at The Gramercy and branding itself as a luxury cafe. I’ve tried the tiramisu latte, hojicha latte, the Foster, matcha latte, and savory cheddar scone. Their tiramisu foam is unique and subtle. Their hojicha latte is made and tastes more like a subtle mocha than hojicha (they add cacao?/mocha syrup to it). The flavor profile of their drinks are more restrained from my experience, so don’t expect strong espresso-based lattes or bold matcha here. The scone I had was delicious though. When it gets busy, finding a seat can be tricky. And, they usually ask you to grab a seat while your drinks are being made and bring it out to you, but twice, they accidentally came to me with someone else's order or asked me to remind them of what I ordered. This isn’t a spot to get a quick drink nor linger to chat with friends, the line can get long and there’s only 12–14 seats inside. I’ve lived in major cities (LA, NYC, D.C., Chicago) and Couve definitely is on the pricier end of coffee shops in the country. I’m curious to try more of their specialty drinks and see how they continue to evolve!"
