"I was sooo excited that Mt. Rubirosa opened up in Aspen, taking over a venue that was once all about the apres, and less about the food. To be able to have their famous Tie-Dye pizza in Gluten-free form was a gift. Pioneered by Guiseppe Pappalardo, Maria’s father, on Staten Island in the early 1960s, it was to “dye” for. We also collectively loved their savory Wedding Soup with perfectly cooked Al-debate homemade pasta, and the Cacio e Pepe, and then, with tummies overly satiated we devoured the S’More and Tira Miso desserts.
